
Decaf does not have to be a consolation prize. Quiet Hour starts as good Colombian coffee, decaffeinated using a water process that soaks the green beans and strips caffeine through carbon filtration — no chemical solvents touch the bean, and at least 97 percent of the caffeine is removed. What survives is real Colombian character: caramel, baked apple, and a soft cocoa finish. Decaffeinated beans are more brittle and roast darker in appearance than their caffeine reflects, so don't judge this bag by its color; we roast it carefully to a true medium. It brews like any of our regular coffees — 1:16, 195 to 205°F — and holds up well in a French press. Evening coffee for people who love coffee, not just caffeine.
