Morning Ridge is our everyday medium roast: washed Colombian beans for clean citrus-cocoa sweetness, blended with a natural-process Brazil that adds body and a nutty finish. It is roasted just past first crack, so it stays sweet without any roasty bitterness, and it is forgiving across brew methods. Start at a 1:16 ratio — 25 g of coffee to 400 g of water — with water between 195 and 205°F, and adjust grind before anything else. Bags carry a one-way degassing valve so the beans can release carbon dioxide without letting oxygen in; flavor peaks between four days and three weeks off roast, and the roast date is stamped on every bag. Ground coffee stales in days, so buy whole bean and grind right before you brew.
