
Our Harvest Lot series follows the coffee calendar: one small purchase per season, roasted until it runs out. This washed lot from Cajamarca, in Peru's northern highlands, is organically grown by a smallholder cooperative and lands soft and sweet — brown sugar, pear, and a gentle floral note, with mild acidity that makes it an easy introduction to light roasts. Because fresh-crop coffee carries more moisture and aromatics than beans that have sat in a warehouse, seasonal buying genuinely matters for cup quality; this is what "fresh crop" tastes like. Brew it as a pour-over at 1:16 with water around 200°F and a medium-fine grind. When this roast sells through, the lot is gone until next season — that is the point of the series.
