
A washed lot from smallholder farms in Ethiopia's Sidama region, grown at high elevation where slow cherry maturation builds dense, sweet beans. We keep the roast light to protect what makes it special: bergamot and lemon aromatics, black tea body, and a honeyed finish. Light roasts are harder and less soluble than dark ones, so this coffee rewards a finer grind and water right at the top of the range — 200 to 205°F — to extract fully. We like it as a pour-over at 1:16, where the clarity really shows; a paper filter keeps the cup bright and tea-like. If your brew tastes sour or thin, grind finer or brew hotter before adding coffee. Roasted to order in small batches, roast date on every bag.
