
Huila, in southern Colombia, produces some of the country's sweetest washed coffees, and this lot shows why: red apple, caramel, and a round milk-chocolate finish with gentle acidity. It is the coffee we hand people who ask for "something good but not weird." We roast it to a true medium — developed enough for balance, light enough to keep the fruit. It behaves well everywhere: 1:16 for drip and pour-over, or a coarse grind and four-minute steep in a French press for a heavier cup. Water between 195 and 205°F suits it; no special handling required. Like all our coffees it ships in a valve-sealed bag with the roast date stamped on, and it is at its best within a month of roasting.
