
Cold brew trades heat for time: steeped in cold water, coffee gives up its sweetness and chocolate notes while leaving behind much of the acidity that hot brewing pulls out. The Tsukiyo is a tall borosilicate carafe with a removable fine-mesh steel core — load the core with coarsely ground coffee, fill with cold filtered water at about 1:8 for ready-to-drink strength (or 1:5 for a concentrate to cut with water or milk), and rest it in the fridge for 12 to 18 hours. Lift the core out and the brew is filtered, no decanting or paper. The wood lid seals well enough to keep fridge odors out; the finished brew keeps its flavor for about a week chilled. Quietly beautiful, easy to clean, endlessly repeatable.
