
Flat-bottom brewers trade the cone's speed for evenness: a level coffee bed of uniform depth extracts more consistently edge to edge, which makes them forgiving of an uneven pour. The Seiryu is that idea in brushed stainless steel — three drain holes sized to meter flow, a perforated floor that keeps the flat filter off the metal, and a wall angle that discourages channeling along the edges. It is a good match for lighter roasts, where even extraction shows up as sweetness instead of sourness. Use flat-bottom basket filters, a medium grind, and a 1:16 ratio; expect a slightly longer total brew than a cone, around 3:30 for two cups. Steel means it will survive the sink, the drawer, and the decade.
