
The Kanaami is a double-layer stainless cone: a fine woven mesh inside a perforated support frame, shaped to stand in a standard cone dripper or directly over a mug. Brewing through metal changes the cup in an honest, describable way — without paper to absorb them, the coffee's oils and finest particles pass into the brew, giving a heavier body and a richer texture at the cost of some clarity, with a little sediment settling at the bottom of the cup. Grind slightly coarser than you would for paper, since mesh drains faster. There is nothing to buy again: rinse after each use, and give it a soft-brush scrub with a drop of unscented dish soap weekly to keep oils from clogging the weave. Dishwasher-safe, top rack.
