
A moka pot brews by physics you can hear: steam pressure in the base — a gentle bar or so, far below true espresso's nine — pushes hot water up through the coffee bed into the top chamber. The Stoveside Classic is the classic faceted aluminum shape of that idea, and aluminum's quick, even heating is why the design endures. Fill the base with hot water to below the safety valve, fill the basket level without tamping, and use a grind finer than drip but coarser than espresso. Brew on medium heat and pull it off when the flow turns pale and starts to gurgle — that sputter is the bitter end you do not want. Hand-wash only; dishwasher detergent corrodes and dulls aluminum's seasoned surface. Moka cups are small and strong: a 6-cup makes about 300 ml.
