Pour water just off the boil into the reservoir, load 14-16 g in the 51 mm basket, and press the lever: a built-in gauge shows pressure at the piston, so you can hold a gentle 2-3 bar pre-infusion, then ride the shot at 6-9 bar. That direct control is the appeal — lever profiling lets you ease off pressure late in the shot, which softens bitterness in darker roasts. No electricity, no warm-up beyond preheating the group with hot water (do not skip this; a cold group can drop brew temperature well below the 90-96 °C target).
