
The Slowdraw is cold brew the workshop way: thick borosilicate glass, a steel mesh filter column fine enough to need no paper, and a turned wood lid that seats with a soft press. The mesh matters more than it looks — too coarse and the brew turns silty; the Slowdraw's weave holds back fines while letting water circulate freely through the grounds during the long steep. Use a coarse grind (fine grounds over-extract even in cold water and cloud the brew), a 1:8 ratio for drinking strength, and 12 to 18 hours in the refrigerator. Longer steeps push toward woody, flat flavors, so set a reminder rather than a guess. Everything disassembles for washing, and there is nothing disposable to rebuy. Makes a week of smooth, low-acid coffee at a time.
