
The Foundry is our workshop take on the stovetop moka: a rounded stainless body with a thick, machined base that spreads heat evenly — the quiet fix for the scorched, ashy notes an overheated moka produces. It runs on every stove including induction, and the black thermoset handle stays comfortable through the brew. The method rewards restraint: start with hot water in the base so the coffee spends less time baking above the burner, fill the basket loosely with a grind a step coarser than espresso, and keep the heat moderate. When the stream goes from honey-brown to pale and the pot begins to sputter, it is done — cooling the base under the tap stops extraction on the spot. About 200 ml of concentrated coffee, brew after brew, for decades.
