Water Temperature, and Why It Matters
For hot brewing, the widely accepted target is 90–96°C (195–205°F). In that window, water is hot enough to dissolve the sugars, acids, and aromatic compounds that make coffee taste like coffee, but not so hot that it strips out excessive bitterness. This range holds across methods — pour-over, French press, drip, and moka all brew well inside it. It is not a superstition; extraction is chemistry, and temperature sets the speed and the selection of what dissolves. You do not need to hit one exact degree. Too cool: the sour cup
Water well below 90°C (195°F) extracts slowly and selectively. Acids dissolve early in any brew, while the sugars and heavier compounds that bring sweetness and body need more heat and time. Brew too cool and you capture the acids without the balance — the cup tastes sour, thin, and weak, and no amount of extra steeping fully rescues it within a normal brew time. This is the classic mistake of letting a kettle sit too long before pouring, or of brewing directly into a cold, unwarmed ceramic dripper that pulls heat out of the water. Preheat your brewer and mug with a rinse of hot water, pour within a minute of reaching temperature, and cool-cup sourness mostly disappears.
Too hot: scorched and bitter
At a rolling boil — 100°C at sea level — water extracts aggressively and indiscriminately. Bitter compounds that a 93°C brew would largely leave behind come flooding out, and delicate aromatics are driven off. The result tastes harsh, ashy, and flat. The fix is easy: take the kettle off the boil and wait 30 to 60 seconds before pouring, which typically lands you in the mid-90s Celsius. The moka pot deserves a special note here. Because it brews over a flame, heat can run away quickly; starting with pre-heated water in the base and pulling the pot off the burner as it finishes keeps the brew from cooking itself bitter in the final seconds.
Matching temperature to the roast
Roast level changes how easily a coffee gives up its flavor. Dark roasts are brittle and porous — they extract readily, so they do well at the cooler end of the range, around 90–93°C (195–200°F), where you get their chocolate and roast sweetness without piling on bitterness. Light roasts are denser and harder to extract; they reward the hotter end, 94–96°C (201–205°F), which helps unlock their sweetness and fruit instead of leaving them grassy and sour. Medium roasts sit comfortably in the middle. If you switch between a Wrenfield light single origin and their darker blend, moving the kettle setting a few degrees is as important as adjusting the grind. It is a small dial with an outsized effect.
Hitting temperature without gadgets
No thermometer, no problem. At sea level, water fresh off the boil sits at 100°C and loses heat quickly in an open kettle — roughly 30 to 60 seconds of waiting brings it into the brewing range, a little longer in a heavy or full kettle. Pouring water between vessels drops it several degrees per transfer, which is another simple lever. At altitude, water boils below 100°C — about 1°C lower per 300 meters — so high-altitude brewers can often pour straight off the boil. A note on the water itself
Temperature is only half of the water story. A cup of coffee is more than 98 percent water, and water that tastes bad alone will taste bad in coffee. Heavily chlorinated tap water flattens aromatics — a simple carbon filter pitcher fixes that. Extremely soft or distilled water is not ideal either; some dissolved minerals help extraction and give the cup body, which is why flat, empty-tasting brews are common with pure distilled water. Very hard water has the opposite problem: it can mute brightness and, more practically, builds limescale in kettles and espresso machines, which is what descaling exists to remove. Filtered tap water is the sensible default for most homes: clean-tasting, mineral-bearing, and kind to your gear.
